Eggless Baking: What Ingredients Can Replace Eggs?

Eggs are a good source of protein, as well as other vitamins and minerals. They can be used in a variety of home-cooked dishes, such as scrambled eggs and egg drop soup.

They are an essential ingredient in most baking recipes. However, if you are allergic to eggs or prefer not to use them for other reasons, you can substitute the following ingredients.

First, it should be noted that the following egg substitutes are only suitable for recipes requiring three eggs or fewer, unless otherwise specified.

Fruit Puree

Fruit purees not only add moisture to baking but also act as a good binder. Apple puree and banana puree are the most common egg substitutes in baking, but pumpkin puree and avocado puree also work well.

When making quick breads or cakes, you can substitute eggs with a sweeter or less sweet fruit puree, depending on your preferred sweetness level. Substitute 1/4 cup of fruit puree for each egg. For a fluffier pastry, add 1/2 teaspoon of baking powder for each egg.

Nut Butter

Nuts provide healthy fats, and when made into nut butter, they can bind ingredients together, just like eggs. However, nut butter has a stronger flavor and is more suitable for pastries that complement nutty notes, such as peanut butter brownies, almond cake, and chocolate cupcakes.

For each egg, you can use 3 tablespoons of smooth nut butter. Avoid using grainy nut butter, as it will affect the adhesion of ingredients and the texture of the pastry.

Flaxseed Meal

Rich in omega-3 fatty acids, flaxseed meal is not only nutritious but can also be used in place of eggs when baking. It also imparts a nutty aroma to pastries.

Flaxseed meal is a great substitute for eggs in muffins, brownies, and cupcakes. Simply mix 1 tablespoon of flaxseed meal with 3 tablespoons of warm water and let it sit for about a minute. This will replace one egg.

Mashed Potatoes

Boiled and mashed potatoes can be used as a moist substitute for eggs in baked recipes. Mashed potatoes are particularly useful in airy breads and rolls.

To season the potatoes before baking, you can also add a little butter or heavy cream, or even minced garlic, but you’ll need to reduce the amount of other liquid ingredients slightly. For each egg, use 2 tablespoons of mashed potatoes.

Water + Vegetable Oil + Baking Powder

If a baking recipe calls for 3 or fewer eggs, you can replace the eggs by mixing water, vegetable oil, and baking powder. However, if the recipe calls for more than 3 eggs, avoid this method, as it will result in greasy cakes, cookies, and other desserts.

Mix 2 tablespoons of water, 1 tablespoon of vegetable oil, and 2 teaspoons of baking powder to replace 1 egg.

Silk Tofu

Silk tofu can also be used as a substitute for eggs in baked dishes, even if the recipe calls for more than 3 eggs. However, tofu has a firmer texture than eggs, making it better suited for richer desserts, such as brownies. For every egg, you can use 1/4 cup of silken tofu, but make sure to beat or mash it first.
