How should mushrooms be refrigerated and frozen? Drizzling with lemon juice can prevent oxidation and discoloration.
Mushrooms have a lovely round shape and are perfect for stir-frying, baking, or making soup. However, they can darken due to oxidation during storage. If you won’t be cooking them soon after purchase, refer to the refrigeration and freezing methods demonstrated here. To prevent discoloration, drizzle them with a little lemon juice.
How to Refrigerate Mushrooms
Refrigerate mushrooms as follows. They will stay fresh for about a week.
- Step 1: Wrap 4-5 mushrooms in a paper towel (the number of paper towels needed depends on the size of the mushrooms).
- Step 2: Place the wrapped mushrooms in a freezer bag, seal the bag, and store in the refrigerator.
※Mushrooms are best stored at 2-5°C, so it’s recommended to store them in the refrigerator rather than in the vegetable section, where temperatures are slightly higher.
How to Freeze Mushrooms
Freeze mushrooms as follows. They will stay fresh for about a month.
- Step 1: Slice or dice the mushrooms as desired.
- Step 2: Place the mushrooms in a large bowl and toss with a little lemon juice (the lemon juice will prevent the mushrooms from oxidizing and darkening over time).
- Step 3: Place the mushrooms in a freezer-safe ziplock bag, seal the bag, and store in the refrigerator.
※When using frozen mushrooms, there is no need to thaw them first. Please cook them directly. Frozen mushrooms will release moisture when thawing naturally, which may affect the taste.
