How to Refrigerate Bamboo Shoots
To refrigerate unshelled bamboo shoots, wrap them in newspaper or paper towels.
Place the bamboo shoots in a plastic bag and seal it. Refrigerate them. It’s recommended to consume them within 3-4 days.
If the bamboo shoots have already been shelled, cut them in half lengthwise. If the shoots are larger, cut them lengthwise and then cut them crosswise into quarters.
Place the bamboo shoots in a fresh-keeping container with clean water and soak them. Cover the container and refrigerate. It’s recommended to change the water daily. They will stay fresh for about 4-5 days.
How to Freeze Bamboo Shoots
Please shell the bamboo shoots before freezing. Slice, dice, or shred the bamboo shoots as desired.
Next, sprinkle a little sugar evenly on both sides of the bamboo shoots. Place the bamboo shoots in a freezer-safe ziplock bag. Remove as much air as possible from the bag, seal the bag, and store in the freezer. Sugar retains moisture, preventing the bamboo shoots from drying out and becoming hard while frozen, which can compromise their texture.
Frozen bamboo shoots can be stored for about a month. When ready to use, cook them directly without thawing.
