This time, we’ll introduce the best ways to store potatoes during this season. The key points are “keeping them at room temperature” and “preventing them from sprouting and greening.” Potatoes, which are sensitive to heat, humidity, and direct sunlight, should ideally be stored at room temperature in a cool, dark place. If they are not ready for immediate consumption, they can be refrigerated.
Storing at Room Temperature
① Thoroughly clean the potatoes from dirt and stains and wrap them in newspaper or a paper bag.
Potatoes are moisture-sensitive vegetables. After cleaning, wrap them in newspaper and store them away from moisture. If there is any dirt on them, remove it as it will absorb moisture.
② Store in a well-ventilated area away from direct sunlight.
Exposure to direct sunlight may cause the skin to turn green or sprout. The green part and new sprouts contain toxins and are inedible, so be sure to store them out of direct sunlight.
Tip: Store potatoes with apples; the ethylene released by apples can inhibit sprouting.
Refrigerated Storage
As with room temperature storage, wrap potatoes in newspaper to prevent drying out and moisture.

② Place in a resealable ziplock bag and store in the vegetable compartment of the refrigerator.
Freezer Storage
① Peel and boil the washed potatoes.
② Place in a bowl and mash the cooked potatoes with a masher or fork until smooth. Let cool.
③Place potatoes in a fresh-keeping container or plastic bag, dividing them into portions you might want to eat at a time.
④Store in the freezer.
Tips:
・Do not freeze raw potatoes directly: If you freeze fresh potatoes that retain a lot of moisture, they will have a spongy texture when you thaw and reheat them later.
・Mark the expiration date for future reference.
・After thawing, always reheat before eating.
・Thaw potatoes in the refrigerator before cooking. Once softened, they can be used in various dishes.
