Spanish Baked Eggs

Baked eggs are a common Spanish home-cooked dish. There are actually many variations, ranging from using different ingredients to frying to baking. The Spanish news website, The Local Spain, provides a traditional Spanish baked egg recipe for your reference. The ingredients and steps are as follows:

Ingredients (serves 4):

  • 6 eggs
  • 2 potatoes (peeled and sliced)
  • 1 large onion (julienned)
  • 1 liter olive oil

Instructions:

  • Pour ¾ liter of olive oil into a soup pot and cook over medium-high heat until hot but not smoking. Add the potatoes and onion. Reduce the heat from medium-high to medium and cook until the potatoes are tender (a fork can be easily inserted into the potatoes), about 10 minutes.
  • Remove the potatoes and onion, drizzle them with 2 tablespoons of olive oil, and let cool for about 10 minutes, until they are soft to the touch.
  • Remove the mixing bowl and crack the eggs into the pan until combined. Add the salt, cooled potatoes, and onions and mix well.
  • Pour one tablespoon of olive oil into a large nonstick pan and heat over medium heat until just smoking. Add the eggs, salt, potatoes, and onions to the pan. Stir with a wooden spoon as the eggs cook. This will help the rawer egg on the top to move to the bottom of the pan, ensuring even cooking.
  • When the eggs are cooked through, gently move them with a wooden spoon to ensure they are free of any residue and any remaining raw egg. Then flip them over and cook them again.
  • When cooked through, transfer the eggs to a large plate and enjoy.
