How is nutritional yeast used in cooking?

Although nutritional yeast is similar to the active yeast commonly used in breadmaking, it is inactive and therefore does not help dough rise.

However, nutritional yeast is rich in many nutrients beneficial to the human body. In the vegan community, it is also known as vegetarian cheese because it tastes very similar to cheese. While the nutritional value of nutritional yeast and vegetarian cheese differ, those who cannot consume dairy products but really appreciate the taste of cheese can use nutritional yeast as a seasoning.

Rice

Ingredients:

4 cups vegetable or chicken stock
1 onion (chopped)
2 tablespoons olive oil
1 cup Italian rice (for risotto)
3/4 teaspoon salt
1/2 cup white wine
1/4 cup nutritional yeast

Instructions:

  • Put the stock in a pot and bring to a boil over medium heat. Then reduce to low heat to keep the stock warm.
  • Heat olive oil in a risotto pot or similar pot. Add onion and sauté over medium heat for about 4 minutes, until softened. Add Italian rice and salt and continue cooking for 1 minute. Then add the white wine and simmer over medium-low heat for 1-2 minutes.
  • Pour 1/2 cup of the warm broth from step 1 into the risotto pot, stirring occasionally until the rice has absorbed the broth (about 3 minutes). Then add another 1/2 cup of broth, and so on.
  • Once all the broth is added and the rice is tender, turn off the heat and remove the pot from the stove. Add the nutritional yeast to the risotto and mix well.

Baked Potatoes

Ingredients:

4 cups mini potatoes (halved)
A pinch of olive oil
A pinch of salt
A pinch of pepper
2-3 tablespoons of nutritional yeast

Instructions:

  • Preheat oven to 220°C/420°F.
  • Line a baking sheet with parchment paper, place the potatoes on the sheet, drizzle with olive oil, and sprinkle with salt and pepper.
  • Place the baking sheet and potatoes in the oven and bake for 15 minutes, or until tender inside and golden brown around the edges. Remember to flip the potatoes once.
  • Remove the potatoes from the oven and sprinkle with nutritional yeast.

Popcorn

Ingredients:

8 cups popcorn
1 tablespoon olive oil or melted butter
2 tablespoons nutritional yeast
A pinch of salt

Instructions:

  • Drizzle the olive oil or melted butter over the popcorn, then sprinkle with the nutritional yeast and salt.
  • Toss all ingredients together and enjoy.
  • In addition to the nutritional yeast and salt, you can also add your favorite seasonings to the popcorn.

Broccoli

Ingredients:

5 cups broccoli (cut into small pieces)
A pinch of olive oil
A pinch of salt
A pinch of pepper
2-3 tablespoons nutritional yeast


Instructions:

  • Preheat oven to 220°C/420°F.
  • Place broccoli on a baking sheet lined with parchment paper. Drizzle the broccoli with olive oil, salt, and pepper. Roast for 20-25 minutes, turning the broccoli over once.
  • Remove the broccoli from the oven and sprinkle with nutritional yeast.

Salad Dressing

Ingredients:

2 garlic cloves (minced)
2 1/2 tablespoons lemon juice
1 teaspoon Dijon mustard
A pinch of salt and pepper
2/3 cup olive oil
3 tablespoons nutritional yeast

Instructions:

  • Combine the garlic cloves, lemon juice, Dijon mustard, salt, and pepper in a large bowl and toss until combined. Gradually add the olive oil to the large bowl, stirring until combined.
  • Finally, add the nutritional yeast to the bowl and mix well.
