How to Store Black Fungus

How to refrigerate and freeze black fungus? Tips to keep it crispy.

Black fungus is crunchy and delicious, and it’s packed with nutrients. Mushrooms, in particular, are rich in polysaccharides, which can help boost immunity. But how should you store your black fungus to extend its shelf life?

How to Refrigerate Black Fungus

If you plan to use your black fungus within a week, refer to the refrigeration instructions below.

First, rinse the black fungus with clean water. Dry it thoroughly with paper towels. Divide it into small portions and wrap them in plastic wrap or a small plastic bag. Place them in a ziplock bag. Seal the bag and place it in the vegetable and fruit section of the refrigerator.

It will keep for about a week.

The night before you plan to use it, remove the black fungus from the vegetable and fruit section and soak it in water. Refrigerate it overnight and then remove it when you are ready to cook it.

This will restore the crispness of the black fungus, which may become soft after being refrigerated.

How to Freeze Black Fungus

If you can’t finish your black fungus within a week, freeze it. It will keep fresh for about a month.

It is recommended to cook the black fungus before freezing it. This way, it can be used immediately and retains its crispness.

After cooking the black fungus, quickly cool it in ice water (if ice cubes are unavailable, soak it in cold water to help cool it down).

Then remove the black fungus and dry it with paper towels. Wrap each portion in freezer-safe plastic wrap or small plastic bags. Place the black fungus in a freezer-safe ziplock bag. Remove as much air as possible from the bag, seal it, and store it in the freezer. It’s recommended to use it within one month.

Do I need to defrost frozen black fungus before cooking?

If you’ll be heating it during cooking, defrosting is not necessary. If you’re going to cut it, you can cut it while it’s still frozen. However, if you’re using it in a salad or other cold dish, thaw it in the refrigerator for about three hours before using.
