If you have white radish you bought and can’t use it all in a short time, freezing it is a simple way to significantly extend its shelf life. Frozen white radish not only absorbs flavor better when cooked, but also has a softer texture!
How to Store White Radish: Freezing
White radish frozen using the following method will stay fresh for at least one month.
Freezing Instructions
Step 1: Wash and dry the white radish, remove the top, and peel it.
Step 2: Cut the white radish into small pieces, strips, or fan-shaped slices, depending on your cooking needs.
Step 3: Take a freezer-safe ziplock bag and place the white radish inside, removing as much air as possible and sealing the bag.
Step 4: After freezing for about an hour, remove the ziplock bag and manually loosen and break up the white radish. Return the bag to the freezer and freeze. Frozen white radish does not need to be thawed first; cook directly.
If you are freezing grated white radish, refer to the following instructions.
How to Freeze Grated White Radish
Step 1: Wash and dry the white radish, remove the top, and peel it with or without the skin.
Step 2: Grate the daikon radish into a puree and strain with a strainer to remove excess water. Avoid squeezing the puree while straining; freezing it will preserve its texture.
Step 3: Spread the puree evenly into a ziplock bag and seal it. Use a chopstick to press the puree into a fold. Once frozen, you can easily separate the desired portion along the fold.
Step 4: Freeze the puree in the refrigerator. To use the frozen puree later, allow it to thaw naturally at room temperature before use.
