Mushrooms come in many different shapes, from the slender enoki mushroom to the compact shiitake mushroom. Rounder mushrooms are also very popular!

Tips for selecting and storing mushrooms

Mushrooms, also known as button mushrooms, are rich in iron and various amino acids. They have a charming aroma and umami flavor, along with a rich, firm texture. A sweet juice oozes out when you bite into them. Here are some tips for buying mushrooms:

Select mushrooms that are intact, free of deformities, or with numerous bruises. Fresh mushrooms should have no odor and feel dry to the touch. If black folds are visible under the cap, they are not fresh.

How to store mushrooms:

If you want to refrigerate mushrooms, gently pat the surface dry with paper towels. Place the mushrooms in a paper bag to absorb the moisture released. Refrigerate and store for about 7 days.

If you don’t have paper bags, wrap the mushrooms in paper towels. Place them in a plastic bag and refrigerate. Mushrooms can also be frozen and will keep fresh for at least a month.

Mushroom Dishes

Our first mushroom dish is “Cream of Mushroom Risotto.” This is also a simple one-pot recipe. Soak the rice for about 30 minutes, then sauté the vegetables until softened. Add the rice and seasonings and simmer.

Our second mushroom dish is “Potato Mushroom Soup.” Substitute potatoes for flour. Sautéing onions beforehand adds a sweetness to the soup. Feel free to add your favorite seafood. This delicious soup will keep you coming back for more!
