Salt and Scallion Pan-Fried Pork Chops
Crispy on the outside and tender on the inside!! Intensely flavorful with scallions, incredibly delicious!A simple yet delicious dish that even those who don't like scallions will love! Choose pork shoulder (shoulder meat) as it's less likely to overcook. The pork chops are pan-fried until crispy on the outside and tender on the inside, then braised with scallions and minced garlic—the aroma is irresistible! A bite of meat followed by a bite of rice is incredibly satisfying!

1. Cut the pork shoulder into 2cm thick slices and tenderize with the back of a knife.
2. Add ginger slices, 2 tbsp light soy sauce, 1 tbsp oyster sauce, sea salt, black pepper, egg, and 1 tbsp cornstarch.
Mix well and marinate for half an hour.
3. Mix half a bowl of chopped scallions, 1 tbsp minced garlic, half a tbsp sugar, sea salt, black pepper, and 2 tbsp sesame oil.
4. Heat a pan with a spray of oil, add the pork shoulder, and sear over medium-high heat for about 3 minutes on each side.
5. After searing, cut into small pieces and return to the pan. Add the sauce mixture from step 3, cover, and simmer over low heat for 2 minutes.
6. Done!
