Mix the shrimp, ginger, 1 tbsp cooking wine, 1 tbsp light soy sauce, sea salt, and black pepper together and marinate. Cut the asparagus and mushrooms into small pieces. Bring water to a boil and add a suitable amount of oil and salt. Blanch the asparagus in boiling water, then rinse with cold water. Heat a pan, add oil, then add shrimp. Pan-fry the shrimp until golden brown and slightly cooked through, then remove from the pan. Sauté minced garlic until fragrant, then add mushrooms and sauté until just cooked through. Add the asparagus and shrimp back to the pan. Add one tablespoon of light soy sauce, one tablespoon of oyster sauce, sea salt, and black pepper. Stir-fry over high heat until well combined and flavorful.
