Sweet and Sour Fish

Sweet and sour fish is a must-order dish at Chinese restaurants. The fish is first deep-fried until crispy, then topped with a sweet and sour sauce that's perfect with rice.

Ingredients
  

  • 1 (whole) Fish
  • A small amount Ginger
  • Appropriate amount Scallions/Onions
  • A small amount Garlic
  • 2 2 tablespoons Tomato sauce
  • 1 tablespoon Sugar
  • 1 tablespoon White vinegar
  • 1 tablespoon Black vinegar

Notes

  • Wash and dry the fish. Wash and finely chop the scallions, garlic, and ginger.
  • Heat a pan, then fry or deep-fry the fish until golden brown. Remove from the pan.
  • Sauté the chopped ginger, scallions, and garlic in the pan until fragrant. Add tomato sauce, white vinegar, sugar, soy sauce, and a little water or rice wine, and cook until the sauce thickens. Pour the sauce over the fried fish.
