Teochew Bitter Melon & Soybean soup

In Teochew, bitter melon is a popular soup ingredient in summer. Besides the bitter melon and pork ribs soup we've mentioned before, there's also this bitter melon and soybean soup. Hollowing out the bitter melon, adding pork and soybeans, the soup is a perfect way to beat the heat.

Ingredients
  

  • 500 g bitter melon
  • 250 g pork
  • 100 g soybean
  • 5 g salt
  • 10 g soy sauce
  • 50 g cornstarch Make pork taste softer

Equipment

  • 1 induction cooker
  • 1 Iron pot with lid

Notes

  1. First, rinse the soybeans thoroughly and place them in a cast iron pot. Bring to a boil.
  2. Chop the pork into minced meat. Add soy sauce, salt, and cornstarch and mix well.
  3. Rinse the bitter melon. Cut it horizontally into 3-5cm pieces.
  4. Hollow out the bitter melon. Wash it. Stuff it with the marinated minced pork.
  5. Place the pork-stuffed bitter melon in the cast iron pot and cook it with the soybeans.
  6. Simmer for one hour. If the water level is low, add boiling water.
