Teochew Meat Roll

Teochew meat rolls are a favorite food of the Teochew people. They are often used in braising liquids, noodle soups, and pork trotter rice. The meat rolls can be further processed, such as pan-fried or stewed, to enhance their flavor.

Ingredients
  

  • 500 g pork
  • 300 g corn starch
  • 20 g Garlic powder
  • 10 g Salt
  • 5 g pepper
  • 50 g ice water
  • 15 g sugar
  • 10 g sesame paste
  • 3 piece bean curd skin

Equipment

  • 1 meat grinder

Notes

1. Peel the pork hind leg and cut into even pieces. Freeze for 1 hour.
2. Place the frozen pork in a meat grinder and mince until minced. Caution: Do not hold the grinder for too long to avoid burning it. It's best to place some ice cubes around the outside of the grinder container to keep the pork cool.
3. Season: Add sugar, salt, cornstarch, pepper, sesame paste, and garlic powder. Add ice water and ice cubes.
4. Blend until the pork is thickened.
5. Place the pork on the tofu skin. Roll it up tightly.
6. Lower heat to low and add enough oil to cover the meat rolls. Fry over low heat for about 15 minutes, until the tofu skin is golden brown and the meat rolls are puffed up. Flip the meat rolls over to avoid burning them.
 
Finally, let cool to room temperature before cutting.
